Almond & Raspberry Shortbread Cookies

1 cup softened butter
2/3 cup granulated sugar
1/2 tsp almond extract + 3/4 tsp
2 cups flour
1/2 cup seedless raspberry jam
1/2 cup xxx sugar
1 tsp milk

  1. Preheat oven to 350◦
  2. In a mixing bowl, combine the butter, 1/2 tsp almond extract and granulated sugar. Beat until smooth. 
  3. Slowly add the flour and still until a dough forms.
  4. Roll dough into 1-1/2" balls.Place on an un-greased cookie sheet.
  5. Using your thumb, press down in the center of the cookie to forma a hole. In the hole, place a dollop of jam.
  6. Combine the powdered sugar (xxx sugar) 3/4 tsp almond extract and milk. Still until smooth. Set aside.
  7. Bake for 14-18 minutes or until it is a pretty golden brown. 
  8. Allow cookies to cool for about 1 minute.
  9. Drizzle the xxx sugar mixtures over the cookies.
