Donuts
3 eggs
2 oranges
1 tsp vanilla
Oil for frying
1-1/3 cup sugar
1/4 cup milk, whole
1 tbs baking powder
1-1/2 sea salt
1 tsp nutmeg, ground
4 cups flour, all-purpose + additional for surface
1/4 cup butter, cut into small cubes
2/3 cup instant mashed potato flakes
Topping
1 cup sugar
Zest of 1 orange
- Whisk together the flour, baking powder, salt and nutmeg.
- Zest the oranges and set aside the zest. Squeeze the oranges. You should get about 3/4 cup of juice.
- In a small saucepan, pour in the orange juice and bring to a boil.
- Remove from heat. Add the milk and butter. Stir until the butter is melted.
- Add the potato flakes and stir until thickened.
- Transfer to a larger mixing bowl. On a low speed beat in the eggs. add the sugar, orange zest and vanilla.
- Slowly add the flour mixture. Mix well. cover and refrigerate overnight.
- When ready to eat, Make the topping. Set aside.
- In a saucepan for electric fryer heat 3-4 inches of oil to 340◦ to 360◦
- Divide the dough in half and on a lightly floured surface roll out the dough and cut out the donuts.
- Fry the donuts in batches of 3 or 4 at a time. Fry for 1-1/2 2 minutes per side or until a pretty golden brown.
- Remove from oil and place on paper towel.
- While still warm, coat in the sugar topping
