1/4 tsp salt
1/4 tsp nutmeg
1/2 tsp baking soda
1/2 cup vegetable oil
1/2 tsp baking powder
3/4 cup flour, all-purpose
2/3 cup light brown sugar
3/4 cup whole wheat flour
8 oz can crushed pineapple, drained
1 cup finely shredded carrots
- Preheat oven to 350◦
- Line a loaf pan with foil, grease and flour the foil. Set aside.
- In a bowl, combine the all purpose flour, the wheat flour, brown sugar, salt, baking soda, baking powder and nutmeg. Mix well.
- Add brown sugar, egg, vegetable oil and carrots and pineapple. Stir until well incorporated.
- Pour into prepared loaf.
- Bake for 50-60 minutes or until done.
- Allow to cool before slices.
