Apple Cupcakes | Salted Caramel Frosting

Apple Cupcakes with Salted Caramel Frosting-


2 eggs
1/2 tsp salt
1 tsp vanilla
1 tsp cinnamon
2 tsp baking soda
3/4 cup heavy cream
1/2 cup brown sugar
1/2 cup sour cream
1/2 cup granulated sugar
3 cups flour, all-purpose
1-1/2 cup peeled and diced apples, granny smith
3/4 cup butter, softened & unsalted

Salted Caramel Frosting 

40 caramel candies
6 tbs heavy cream
Sea salt
  1. Preheat oven to 350◦ 
  2. Line tin with paper liners.
  3. Combine flour, baking soda, cinnamon and salt. Mix well.
  4. Beat in butter, brown sugar, granulated sugar, eggs, sour cream and vanilla. Mix well.
  5. Add the flour mixture alternating with the heavy cream.
  6. Fold in apples. Fill the liners half way.
  7. Bake for 25-30 minutes.
  8. Allow to cool on a rack.
  9. Frosting: In a heavy saucepan, heat the caramel and cream over low-heat until it is smooth. allow to cool a bit before frosting the cupcakes.
