Chocolate Truffles 2

Chocolate Truffles
  • 1 oz semi-sweet chocolate chips
  • 1 tbs orange extract
  • 1 tbs vanilla extract
  • ⅔ cup heavy cream
  • 2 tbs cocoa
  1. Place the chcolate chips and extracts in a mixing bowl.
  2. In a saucepan, bring the cream to a boil. Pour over chocolate chips.
  3. Allow to sit for 5 minutes. Stir until smooth.
  4. Refrigerate until firm (about 30-45 minutes.
  5. Line a sheet with waxpaper or parchment paper.
  6. Using a tbs, measure out 24 servings on the sheet. Refrigerate for an additional 15 minutes.
  7. When firm enough to handel, roll quickly into a ball.
  8. dust with cocoa powder, shaking off the excess.
  9. Store in the refrigerator.
  10. Remove from refrigerator about an hour before serving.
