Got a bumper crop of sweet potatoes and wondering what do do with them, why not give this rich creamy pie a try!
Ingredients
- 2 sweet potatoes, peeled & chopped
- ¾ cup marshmallow creame
- ½ cup cold butter, cubed
- 1 5 oz can evaportated milk
- 3 eggs
- 1 teaspoon vanilla extract
- ¼ teaspoon almond extract
- ¾ cup sugar
- ¼ cup brown sugar, packed
- 1 tbs flour
- ⅛ tsp cinnamon
- ⅛ tsp nutmeg
- 1 unbaked pie crust
- ½ cup whipped topping
Instructions
- Preheat oven to 350 ◦
- Combine the flour, sugars and spices. Mix well.Set aside.
- In a saucepan, cover the sweet potatoes with water and then bring to a boil. cook until they are tender. Drain and place in a mixing bowl.
- Mash the sweet potatoes.
- Add butter and marshmellow creme. beat until ssmooth.
- Add the milk, extracts, and eggs. Beat well.
