Bottom Layer
3/4 cup cold butter
2 squares (1 oz each) semi-sweet chocolate
1-1/2 cup gramcracker crumbs
1 cup flaked cocolnut
1/2 cup chopped salted peanuts
1/4 cup toasted wheat germ
Filling
two 8oz pkg cream cheese
3/4 cup sugar
2/3 cup chunky peanut butter
1 teaspoon vanilla
Topping
4 squares (1 oz each) semi-sweet chocolate
1/4 cup butter
- For the bottom layer......In a microwavable bowl, heat the butter and 2 squares of chocolate for 1 minute; stir. continue to microwave and stir in 30 second intervals until melted and smooth.
- Stir in cracker crumbs, coconut, peanuts and wheat germ.
- Press this into a greased 9 13 pan. cover and refrigerate for at least 30 minutes.
- For the filling.....In a mixing bowl, combine all of the filling ingredients and beat until smooth and creamy.
- Spread this over the bottom layer. Return to refrigerator for another 30 minutes.
- For the topping.....In a microwavable bowl, heat the butter and 4 squares of chocolate for 1 minute; stir. continue to microwave and stir in 30 second intervals until melted and smooth.
- Pour over filling and refrigerate until set.
- Cut into squares.
