Peanut Butter Cake

1 tablespoon plus 1 teaspoon peanut butter
3 tablespoons almond milk, unsweetened
2 egg whites
2 tablespoons flour
1/2 teaspoon baking powder
1 pinch salt
Stevia to taste

  1. Combine 1 teaspoon of peanut butter and 1 tablespoon of the almond milk in a small microwavable bowl. Set aside. (This will be drizzled over the cake when it's done)
  2. In a separate microwavable dish, (coffee mugs work too) add the remaining peanut butter and almond milk. Nuke for 1 minute. Allow to sit for about 5 minutes to cool down.
  3. To the above ingredients (Step 2) add the egg whites, flour, steavia, baking powder and salt. Mix well
  4. Grease a microwavable dish or coffee mug. Pour the batter into this. spread evenly.
  5. Microwave for 1-1/2 - 2 minutes (Microwave times vary) Allow to cool for 2-3 minutes.
  6. Microwave the ingredients from step 1 for 1 minute.
  7. Drizzle over the cake.
