Lemon Poppy Seed Quick Bread

1 cup lemon yogurt
2 tsp grated lemon zest
1 tablespoon poppy seed
1-3/4 cup flour
1-1/4 teaspoon baking poder
1/2 teaspoon salt
2 large eggs
3/4 cup sugar
1/2 cup canola oil
1 teaspoon vanilla

3/4 cup xxx sugar
2 tablespoons fresh lemon juice

  1.  Preheat oven to 350 ◦  
  2. Grease and flour a loaf pan.
  3. In a bowl, combine the flour, baking powder and salt. Mix and set aside.
  4. In a mixing bowl whisk together the eggs, yogurt, sugar, oil, lemon zest, poppy seeds and vanilla.
  5. Gradually add the flour mixture to the egg mixture. Stir until throughly mixed.
  6. Pour the batter into the gread loaf pan and bake for 55-60 minutes or until a toothpick inserted comes out clean.
  7. While the bread is baking, prepare the glaze.....In a small bowl combine the xxx sugar and lemon juice. Stir until well mixed.
  8. While the bread is still warm and cooking on a wire rack spoon the glaze evenly over the bread.
