1 cup fat free evaporated milk
1/4 to 1/2 cup powdered sugar
1 Tbsp fresh lemon juice
1/2 tsp. vanilla extract (or preferred flavoring)
- Pour evaporated milk into a mixer bowl.
- Cover and chill in the freezer along with the beaters for about half an hour.
- Remove and beat evaporated milk on high until frothy, about 1-2 minutes.
- Slowly add sugar, lemon juice, and flavoring, beating until the mixture becomes stiff (about 2-3 minutes).
- Serve immediately. Makes a big bowl of whipped topping --about four cups.
