Chocolate Truffle Pie (No Bake)

  • ½ cup pecan pieces, toasted and coarsely chopped
  • 6 oz ready to fill chocolate crumb crust
  • Caramel Layer
  • ¾ cup individually wrapped caramels (17 squares)
  • ¼ cup canned evaportated ilk
  • Truffle Layer
  • 1-1/2 cup semi-sweet chocolate chips
  • 1 cup heavy whipping cream
  • 3 tablespoons butter
  • Garnish: Sweetened whipped cream
  1. Sprinkle the pecans on the crust
  2. Caramel layer: Heat the caramels and milk in a heavy saucepan over low-heat, or in a microwavable bowl stirring often until the caramels are melted and the mixture is smooth. Pour over the pecans.
  3. Truffle Layer: Heat the chocolate chips, cream and butter in a havy saucepan over low-heat, or in a microwavable bowl. Stir until the chcolate is melted and the mixture is smooth. Pour this over the caramel layer. Refrigerate until set, about 4 hours.
  4. To serve: Pipe or spoon on the sweetened whipped cream.
