Carrot Cake Cookies


1 cup butter
1 cup brown sugar
1 cup white sugar
1-1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
2 eggs
1 teaspoon vanilla
2 cups rolled oats (don't use instant)
1-1/2 cups of finely grated carrots
1 cup raisns

8 oz cream cheese, room temperature
1/2 cup butter
1 cup powdered sugar
1 teaspoon vanilla
  • Combine and beat until creamy and smooth.

  1. Combine all of the above ingredients
  2. Chill dough for aprox. 30 minutes
  3. Preheat oven to 350 ◦  
  4. Place on a parchment line cookie sheet and bakie for 10-12 minutes
  5. When cool, you can frost. The original recipes makes these into a sandwich type of cookie.
