Pistachio Crescents

These cookies are a perfect accompaniment t to a nice cup of hot tea!

2 tablespoons butter or margarine, melted
1/3 cup sugar (granulated)
1 egg
1/4 teaspoon almond extract
3/4 teaspoon baking powder
3/4 cup flour + additional for shaping cookies
2 tablespoons shelled pistachio nuts, finely chopped
1/8 teaspoon salt
xxx sugar for dusting (confectioners' sugar, aka powdered sugar)

  • Preheat oven to 350◦ 
  • Grease a large cookie sheet
  • Whisk together butter, granulated sugar, egg, almond extract, salt, and baking powder.
  • Stir in flour, and pistachios.
  • Drop the batter on a wax-paper lined counter that has been lighted sprinkled with additional flour. Using floured hands, lightly roll into a 2" long rope.
  • Transfer to the greased cookie sheet, and curve each cookie into a crescent shape.
  • Bake for 10-12 minutes.
  • Sprinkle with xxx sugar
