Meatball Hero's

Looking for creative ideas to use up your extra surplus of Thanksgiving stuffing, why not treat your family to these Meatball Heros made from leftover stuffing. Don't have leftover stuffing....substitute it with your favorite  box of prepared stuffing.

  • 1-1/2 cup leftover stuffing, finely chopped (1 box of your favorite prepared stuffing mix)
  • 1-1/2 lbs ground beef
  • 2 eggs
  • 2 tablespoons Parmesan cheese, grated
  • 2 garlic cloves, finely chopped
  • 1/2 cup fresh parsley, finely chopped
  • 4 hero rolls, split (top/botto)
  • 4 oz shredded mozzarella
  • 1 cup marinara sauce
  • salt & pepper to taste
  1. Preheat broiler
  2. Line 2 baking sheets with alum foil.
  3. In a bowl whisk together the eggs, Parmesan cheese, garlic, parsley, salt & pepper.
  4. Add the stuffing. Mix well.
  5. Add ground beef.
  6. Form into 12 equal sized meatballs.
  7. Place meatballs one on the the baking sheet and broil until done. About 8-10 minutes.
  8. On the 2nd baking sheet, Place the hero rolls.
  9. On the bottom half of roll, place sauce, & 4 meatballs. On the top half, place the cheese.
  10. Broil until the cheese is melted and the bread is toasted a golden-brown.
