1- 1/2 lb ground beef
2/3 cracker crumbs
1/3 cup minced onion
1 egg
1-1/2 teaspoon salt
1/4 teaspoon ginger
1/4 cup milk
1 tablespoon oil
2 tablespoons cornstarch
1/2 cup brown sugar
1-13 oz can of pineapple tidbits
1/3 cup vinegar
1 tablespoon soy sauce
1/3 cup chopped green pepper
- Drain pineapple, reserve liquid.
- Combine: Beef, cracker crumbs, onion, egg, salt, ginger, & milk. Mix well.
- Shape into rounded balls.
- Add oil to skillet and cook meatballs until browned and thoroughly cooked.
- Discard the grease. Remove the meatballs from skillet and place them in a warm over to keep them warm.
- Combine the cornstarch, sugar, pineapple juice, vinegar, soy sauce. Mix well. Pour into skillet.
- Cook over medium heat, stirring constantly until thickens and smooth. (about 3-5 minutes)
- Add the meatballs and pineapple tidbits.
- Serve over rice as a meal or on toothpicks as an appetizer.
