Beef Burritos With Pepper Jack Cheese & Black Beans

1/2 pound ground beef, sirloin
2 teaspoons minced garlic
1 cup salsa, divided
2 cups cooked rice, brown or white
1 whole-wheat tortillas
15 oz  can of black beans, drained and rinsed
11 oz can corn, drained
2 cups shredded pepper jack cheese
1/3 cup sliced green onion
  • Brown the ground beef and garlic in a skillet over medium heat. Drain the fat.
  • Stir in 1/2 cup of the salsa. Set aside.
  • Spread 1/3 cup of rice on the center of a tortilla.
  • Sprinkle 2 tablespoons of beans and 1-1/2 tablespoon of corn over rice.
  • Put 1/3 cup of beef mixture over that.
  • Sprinkle with 1/4 cup of cheese.
  • Top with 2 teaspoons of salsa.
  • Fold in the two opposite edges of tortilla and roll up.
  • Place seam-side down on a microwave plate and microwave for 1 minutes or until heated through.
