Mason Jar Pumpkin Cheesecake Trifle

This recipes was one of the winning recipes from the 2014 WV Pumpkin Festival Bake-Off! Submitted by Mary M. from Barboursville, WV. I got the recipes from the Nov. 2014 Market Bulletin.
  • 1 loaf of pumpkin bread
  • 8 oz softened cream cheese
  • 1 cup canned pumpkin
  • ½ cup sugar
  • ½ teaspoon pumpkin pie spice
  • 2 cups whipped cream + additional for topping
  • Pecan halfs
  • Four pint size mason jars
  1. Cut the pumpkin bread into bite-size pieces. Set aside.
  2. In a large bowl, whisk the cream cheese, pumpkin. sugar, and spices until combined.
  3. Fold in the whipped cream. Mix well.
  4. Fill the bottom of each jar with a few pieces of pumpkin bread.
  5. Spoon a layer of the cheesecake filling on top.
  6. Repeat layers until the jars are full.
  7. Top with additional whipped cream and top with pecans.
