4 boneless, skinless chicken breast
Mayonnaise
1 cup cheese crackers, crushed
1/2 package taco seasoning
1 cup sharp cheddar cheese, grated
4 oz can of chopped green chilies (or) 1 seeded jalapeno, chopped
- Preheat oven to 350°
- Combine crackers and taco seasoning. Mix well.
- Spread mayonnaise on both sides of chicken breast.
- Dredge in cracker/seasoning mixture.
- Place 1/4 cup of cheese and some chopped green chilies on chicken breast.
- Roll-up and secure with a toothpick.
- Bake in oven for about 45 minutes.
