Cookies
2-1/4 cup flour
1/4 cup cocoa
1 tablespoon pumpkin pie spice
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup molasses
1/4 cup boilin water
1/4 teaspoon baking soda
1/2 cup butter
1/3 cup brown sugar
1/3 cup granulated sugar
1 egg
Filling
8 oz package of cream cheese
1 cup marshmallow cream
- Combine in a bowl: Flour, cocoa, spices, baking powder and salt. Set aside.
- In a small bowl combine molasses, water and baking soda.
- In a mixing bowl beat the butter and sugars until fluffy.
- Beat in egg and blend well.
- With mixer on low, alternately beat in flour mixture and molasses mixture until dough forms.
- Dived dough in half; place each half between sheets of waxed paper.
- Roll our to 1/8 inh thickness.
- Stack on baking sheet; freeze 30 minutes or until firm.
- Preheat oven to 350°
- Working with portion of dough at a time, use desired cookie cutter shapes and cut out cookies.
