I picked some cucumbers yesterday, got about 14 of them. I plan to make some relish with them. We last canned these in 2005. I got the recipe from a Kerr book. I think I'll make them Sunday. I don't have all the ingredients to make them, will need to pick up some red & green peppers. (I planted some, but they're not ready yet.)
4 cups of ground, unpeeled cucumbers (about 4)
1 cup ground green pepper (about 2)
1/2 cup ground sweet red pepper (about 1)
3 cups ground onion
2 cups finely diced celery
1/4 cup salt
3-1/2 cup sugar
2 cups white vinegar
1 tablespoon celery seed
1 tablespoon mustard seed.
- Use the coarse blade on grinder. Combine all vegetables in large bowl. Sprinkle with salt.cover with cold water, let stand 4 hours.
- Drain thoroughly in colander.
- Press our all excess liquid.
- Combine sugar, vinegar, celery & mustard seeds.
- Bring to boil, stirring until sugar is dissolved.
- Stir in drained vegetables.
- Simmer for 10 minutes.
- Pack into sterilized pint jars within 1/2 inch of top.
- Water bath for 10 minutes.
