Peanut Butter Cup Cookies

1 (6-pack of Reese Peanut Butter Cups Candy
10-oz pkg of brownie Mix
16 oz tube of refrigerated Chocolate Chip Cookie Dough

  1. Heat oven to 350°F. Line 13x9-inch pan with foil, allowing foil to hang over sides of pan for easy removal after baking. Spray with cooking spray.
  1. Press cookie dough evenly in bottom of pan. Top with single layer of peanut butter cups. Make brownie batter as directed on box. Spread batter on top of peanut butter cups.
  1. Bake 30 to 40 minutes or until brownies are set around sides and toothpick inserted in center of brownies (not candies) comes out clean. Cool in pan 20 minutes. Remove brownies from pan by foil edges. Cool completely on cooling rack, about 1 hour. Cut into 6 rows by 4 rows.

To bake these in a muffin pan

  1. Separate the cookie dough into 12 even balls (this ensures that you evenly fill each muffin tin cup), and then squish them down into the bottom of a greased muffin tin.
  1. Place a peanut butter cup upside down on top of the cookie dough.
  1. Finish by evenly distributing the brownie batter on top of each peanut butter cup. If you’re using a 10 ounce package of brownie mix, it should fit perfectly with each cup being about 90% full
  1. Bake in a 350 degree oven for 18-20 minutes or until the brownie batter is cooked through.
  1. Let them rest for about 5 minutes in the pan and then serve warm with ice cream!
