Apple Cake



2 cups sugar
1 cup real butter
2 eggs
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon nutmeg
2 teaspoons cinnamon
1 tablespoon lemon juice
5 cups diced apples
1 cup walnuts, diced
  1. Cream butter and sugar. 
  2. Add eggs and mix well. 
  3. Combine dry ingredients in another bowl and add to egg mixture. 
  4. Sprinkle lemon juice over apples and stir into batter, along with the walnuts. 
  5. Batter will be very thick. Turn out into a buttered 9 x 13 baking dish. 
  6. Bake in a 350 degree oven for 50 - 60 minutes. 
  7. Remove from oven when lightly browned on top. 
  8. Place on cooling rack. 
  9. Frost when completely cool.

Cream cheese frosting:
8 oz. cream cheese, softened
1 stick real butter
2 3/4 c. powdered sugar
2 T. lemon juice
1 t. vanilla
  1. Cream butter and cream cheese until "fluffy". 
  2. Add powdered sugar, a little at a time, along with lemon juice and vanilla. 
  3. Spread liberally over cake. 
  4. Enjoy!
