¾ cup of whole wheat flour
½ cup white flour
½ cup soy flour
1 cup of whole wheat cereal, ( Grapenuts,, Raisin Bran, Bran Flakes etc)
½ cup brown sugar
1 tsp baking powder
1 tsp baking soda
¾ tsp ground cinnamon
1/8 tsp ground cloves
2 slightly beaten eggs
2/3 cup almond milk
¼ cup coconut oil
- Preheat oven to 400°F
- Spray a 12 cup muffin pan with cooking spray or using paper liners.
- In a large bowl stir together all dry ingredients.
- In a medium bowl, combine eggs, almond milk, and cocanut oil.
- Add egg mixture to flour mixture, stir until moistened.
- Fold in carrots.
