Texas Sheet Cake

Not quite sure how Texas laid claim to this cake, it is said perhaps it is because of the abundance of pecans in the Lone Star State. The first time I had a taste of this delicious cake was in a high-school. I had a class called Food Management, and this was one of the cakes they made.The recipe they used was bit different then this one.

1-1/2 cups Dr. Pepper soda
1 cup vegetable oil
1/2 cup cocoa powder
1 cup sugar, granulated
2 cups flour, all -purpose
1 cup brown sugar, light and firmly packed
1/2 tsp salt
1-1/2 tsp baking soda
1/2 cup buttermilk
2 eggs, large and lightly beaten
2 tsp vanilla extract
1-1/4 cup of toasted pecans


  1. Preheat oven to 350
  2. Grease/flour or spray with cooking spray a sheet cake pan      (17 inch x 12 inch) Set aside.
  3. Whisk together the flour, granulated and brown sugars, baking soda and salt. Mix well and set aside.
  4. In a saucepan, over med-high heat, bring the Dr. Pepper, oil and cocoa to a boil. Stir and remove from heat and pour into flour mixture (step 2) Whisk until well blended.
  5. Whisk in the buttermilk, eggs and vanilla. Stir until well mixed.
  6. Pour cake batter into the cake pan.
  7. Bake for 18-22 minutes or until a wooden pick inserted in center comes out clean. (Take note of step 8)
  8. While cake is baking, you will prepare the icing because it will be poured on the cake immediately when it comes out of the oven.

Fudge Icing

1/2 cup butter
4 oz unsweetened chocolate baking bar, chopped
5 tbs milk
3 tbs Dr. Pepper
4 cup xxx sugar (confectioners)
1 tsp vanilla
  1. In a saucepan over medium-low heat,whisk together the butter and chocolate until it is melted and smooth.
  2. Remove from heat and whisk in the milk and Dr. Pepper until well blended. Gradually stir in powdered sugar, stirring constantly. Pour over the warm cake, sprinkle with the toasted pecans.
