Potato Doughnuts



Donuts
3 eggs
2 oranges
1 tsp vanilla
Oil for frying
1-1/3 cup sugar
1/4 cup milk, whole
1 tbs baking powder
1-1/2 sea salt
1 tsp nutmeg, ground
4 cups flour, all-purpose + additional for surface
1/4 cup butter, cut into small cubes
2/3 cup instant mashed potato flakes

Topping
1 cup sugar
Zest of 1 orange

  1. Whisk together the flour, baking powder, salt and nutmeg.
  2. Zest the oranges and set aside the zest. Squeeze the oranges. You should get about 3/4 cup of juice. 
  3. In a small saucepan, pour in the orange juice and bring to a boil. 
  4. Remove from heat. Add the milk and butter. Stir until the butter is melted.
  5. Add the potato flakes and stir until thickened.
  6. Transfer to a larger mixing bowl. On a low speed beat in the eggs. add the sugar, orange zest and vanilla.
  7. Slowly add the flour mixture. Mix well. cover and refrigerate overnight.
  8. When ready to eat, Make the topping. Set aside.
  9. In a saucepan for electric fryer heat 3-4 inches of oil to 340◦ to 360◦
  10. Divide the dough in half and on a lightly floured surface roll out the dough and cut out the donuts.
  11. Fry the donuts in batches of 3 or 4 at a time. Fry for 1-1/2 2 minutes per side or until a pretty golden brown.
  12. Remove from oil and place on paper towel.
  13. While still warm, coat in the sugar topping
