Moist Butter Cupcakes

1 box yellow cake mix
1/2 cup melted butter
4 eggs
2 tsp vanilla
8 oz cream cheese
4 cups xxx sugar

  1. Preheat oven to 350°
  2. Line a cupcake tin with papers or grease and flour. (18 count)
  3. In a mixing bowl combine the cake mix, eggs, butter and 1 tsp of vanilla.
  4. In a separate bowl, beat the cream cheese until smooth. Add xxx sugar and 1 tsp vanilla. Beat until light and fluffy.
  5. Put about 2 tbs of cake batter into each well, press and smooth all the way to the edge. 
  6. Place 2 tbs of of the cream cheese mixture on top of that. Smooth to the edge.
  7. Bake for 20 minutes or until done. Allow to cool.

* I haven't tried this out yet, but I thought that you might be able to place one tbs of cake batter in the tin, top that with 2 tbs of cream cheese filling and then another layer of cake batter (1 tbs) to make a nice cream cheese filling in the middle.
