Carrot PIneapple Quick Bread


1 egg
1/4 tsp salt
1/4 tsp nutmeg
1/2 tsp baking soda
1/2 cup vegetable oil
1/2 tsp baking powder
3/4 cup flour, all-purpose
2/3 cup light brown sugar
3/4 cup whole wheat flour
8 oz can crushed pineapple, drained
1 cup finely shredded carrots

  1. Preheat oven to 350◦
  2. Line a loaf pan with foil, grease and flour the foil. Set aside.
  3. In a bowl, combine the all purpose flour, the wheat flour, brown sugar, salt, baking soda, baking powder and nutmeg. Mix well.
  4. Add brown sugar, egg, vegetable oil and carrots and pineapple. Stir until well incorporated.
  5. Pour into prepared loaf.
  6. Bake for 50-60 minutes or until done.
  7. Allow to cool before slices.
