Growing up my mother always kept our organic eggs on the kitchen-counter and none of us had any ill-effects.

Eggs have a built-in barrier that prevents bacteria from entering the egg. However, when the egg ages, that barrier becomes more permeable. Warmer temperatures can allow the bacteria to grow and that will compromise the safety and freshness of the egg.

According to the American Egg Board an egg that is a week old that is handled properly and stored can be fresher than an egg that has been left for 1 day at room temperature.

Eggs can be stored in the refrigerator for 4-5 weeks at 40°F
