You will love these fully loaded mashed potatoes, so creamy and cheesey! Perfect to take to a potluck.3 lb of cubed and peeled potatoes
8 oz pkg of cream cheese, softened
8 oz container sour cream
1/2 cup cold butter, cut into cubes
1/4 cup milk
1/2 lb turkey bacon, cooked and crumbled
1-1/2 cup shredded Cheddar cheese
1-1/2 cup Colby cheese
4 green onions, thinly sliced
Salt/Pepper to taste
1/2 tsp onion powder
1/2 tsp garlic powder
- Place potatoes in a pan and fill with enough water to cover. Bring to a boil. reduce the heat and allow to simmer until fork tender. Drain.
- Mash the potaotes along with the butter, milk, sour cream and cream cheese.
- Stir in the seasonings, bacon, green onion and 1 cup each of the Colby and Cheddar cheeses.
- Cover and refrigerate overnight.
- Transfer to a greased crock pot, cover and cook 2-1/2 on a low setting.
- About 1/2 hour before serving, sprinkle on the remaining cheeses.
