Fully Loaded Mashed Taters


You will love these fully loaded mashed potatoes, so creamy and cheesey! Perfect to take to a potluck.

3 lb of cubed and peeled potatoes
8 oz pkg of cream cheese, softened
8 oz container sour cream
1/2 cup cold butter, cut into cubes
1/4 cup milk
1/2 lb turkey bacon, cooked and crumbled
1-1/2 cup shredded Cheddar cheese
1-1/2 cup Colby cheese
4 green onions, thinly sliced
Salt/Pepper to taste
1/2 tsp onion powder
1/2 tsp garlic powder
  1. Place potatoes in a pan and fill with enough water to cover. Bring to a boil. reduce the heat and allow to simmer until fork tender. Drain.
  2. Mash the potaotes along with the butter, milk, sour cream and cream cheese.
  3. Stir in the seasonings, bacon, green onion and 1 cup each of the Colby and Cheddar cheeses.
  4. Cover and refrigerate overnight.
  5. Transfer to a  greased crock pot, cover and cook 2-1/2 on a low setting.
  6. About 1/2 hour before serving, sprinkle on the remaining cheeses.
