Chocolate-Coconut Layer Bars | Taste of Home

Chocolate-Coconut Layer Bars Recipe
 Bottom Layer
3/4 cup butter, cut into cubes
3 cups Oreo cookie crumbs
2 cups flaked coconut
1/2 cup cream of coconut

1/3 cup softened butter
2 tbs cream of coconut
1/4 tsp coconut extract
3 cups xxx sugar
1-2 Tbs milk

1-1/2 cups semisweet chocolate chips
2 tsp canola oil
3 mounds candy bars  (optional)

  1. Microwave 3/4 cup of butter in a microwave until melted. Stir in cookie crumbs, cocanut and 1/2 cup cream of coconut. Mix well.
  2. Spread into the bottom of an ungreased 13x9 pan. Refrigerate about 30 minutes until set.
  3. To make the filling, beat the butter, cream of coconut and exptract until it is smooth. Add the xxx sugar and enough milk for desired spreading consistancy. Sread evenly over the bottom layer.
  4. For the topping,  in a microwave, add the chocolate chips and oil. Heat until melted, stirring until smooth. Allow it to cool a bit and then spread over center filling.
  5. Chop the mounds bars in coarse pieces and sprinkle on top.
