Baked Breakfast Burritos




1 lb bacon
8 fresh mushrooms sliced
6 green onions, sliced
1/3 cup chopped green peppers
1 clove garlic or garlic powder
8 eggs
¼ c. sour cream
¾ cup cheddar cheese or Monterey jack cheese
3 tablespoons taco sauce
1 tablespoon butter
Four 9” flour tortillas


Cook bacon until crisp; set aside 1 tablespoon of the drippings.
Sauté mushrooms, onions, green pepper, & garlic in drippings. Set aside & keep warm.
Beat together the eggs & sour cream. Stir in ¼ cup of cheese and taco sauce.
In a skillet melt the butter and add the above egg mixture to it. Stir and cook on low heat until eggs are set.
Remove from heat.
Crumble the bacon.
Add the eggs to the mushroom mixture.
Spoon equal amounts of egg mixture in the center of each tortilla. Roll up. Place seam side down.
Sprinkle with the remaining cheese.
Bake at 350° until the cheese is melted.
