Super-Moist Chocolate Mayo Cake


Beat for 2 minutes:
1 chocolate cake mix
1 cup Hellmann's Mayonnaise
1 cup water
3 eggs
1 tsp ground cinnamon

Bake according to package directions on the cake.

Variations:

Pecan Coconut Topped Cake: 
Mix together: 1 cup flaked coconut, 2/3 cup packed brown sugar, 1/2 cup chopped pecans.
Sprinkle this over the cake batter before baking.

Black Forest Cake:
Spread two 21 oz cans of cherry pie filling over the bottom of a creased 13 x 9-inch pan. Top with the cake batter. Bake for 1 hour or until done. When cool, invert.

Decadent Chocolate Lava Cake
Beat two 3.4 pkgs of instant chocolate pudding, 2 cups milk, 2 cups water and 1/3 cup sugar. Pour this over the cake batter in a 9 x1 3 pan. Bake for 70 minutes or until done. Serve warm.

Yellow Mayonnaise Cake...Substitute yellow cake mix for the chocolate cake mix.

* As a child, I remember my mom making the original Chocolate Mayonnaise Cake. I do recall it being really moist. I don't remember what she frosted it with.Maybe just a simple buttercream frosting.
