Almond Caramels


1 cup granulated sugar
1/2 cup brown sugar
1/2 cup light corn syrup
1-1/2 cups light cream
4 tbs butter
1 tsp vanilla
1/2 cup chopped toasted almonds
You will need a candy thermometer

  1. Grease the bottom and sides of a loaf pan with butter.
  2. In a saucepan, combine both sugars, corn syrup, cream & butter. Stir until you reach the firm ball stage (248◦)
  3. Remove from heat; stir in vanilla and almond.
  4. Put into greased loaf pan.
  5. Allow to cool and cut into squares. 
  6. Wrap each piece in wax paper.
