Chocolate-Dipped Shortbread Fingers


Ingredients
  • 1 cup butter, softened
  • ⅓ cup sugar
  • ⅓ cup brown sugar, packed
  • pinch of salt
  • 1 tsp vanilla
  • 2 cups flour
  • 2-1/2 cup mini chocolate chips
  • 1 tbs vegetable oil
Instructions
  1. Preheat oven to 325
  2. In a mixing bowl combine the butter, sugar and salt. beat until smooth.
  3. Add vanill. Slow add the flour.
  4. fold in ¾ cup of the chocolate chips.
  5. Transfer dough to a 9 x 13 pan, pressing the dough on the bottom of the pan.
  6. Bake for 35 minutes. do not underbake.
  7. Allow to cool in pan for about 5 minutes.
  8. cut lengthwise into retangles.
  9. when cookies are cool, melt the remaining chips over lowheat and dip half the cookie into the chocolate.
  10. Place on waxpaper until set.
