Vidalia Onion Soup

Vidalia Onion Soup
 
You'll love this beef flavored onion soup recipe with it's thick slices of toasted french bread, slathered in melted Swiss cheese.
Ingredients
  • 4-5 large vidalia onions, chopped
  • 3 tbs butter
  • ¼ tsp pepper
  • 1 tsp salt
  • 1 tbs flour
  • 4 cups beef broth
  • 1-1/2 cup water'1 bay leaf
  • 8 slices french bread, toast
  • ½ cup shredded cheese
Instructions
  1. Preheat oven to 400◦
  2. Saute onions in butter until lightly browned.
  3. Sprinkle with flour, salt & pepper
  4. Cooking, stirring constantly for 1 minute.
  5. Add the broth, water and bay leaf
  6. Ladle into an over-proof soup bowl.
  7. Top with bread and then sprinkle with the cheese.
  8. Bake for 10 minutes or until cheesehasmelted
Notes
I remember writing this recipe down when I was visiting my daughter. I think it came out of a Best of Taste of Home cookbook.
