Thin Mints


1/2 cup butter
1/2 cup sugar
1 egg
1 cup cocoa powder
1/2 cup + 1 tablespoon flour
  1. Combine the above ingredients.
  2. Divide the dough into 2 equal pieces.
  3. Chill for 2 hours
  4. Preheat oven to 350◦
  5. Roll out on a flour surface; use a 2" circle cookie cutter.
  6. Bake for 12 minutes
  • In a saucepan add:
1/4 cup of heavy cream
6 oz semi-sweet chocolate chips
1/2 teaspoon mint extract
  • Stir until chocolate is melted.
  • Put in a pastry bag and squeeze a quarter size dollop on a cookie. 
  • Cover with a cookie top.
  • Dip into melted chocolate.
