Texas Ranch Cake

Cake

1 cup butter
2 cups sugar
1/4 cup cocoa
1 cup water
2 eggs
1/2 cup butter milk
1 teaspoon vanilla
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda

Frosting

1/2 cup butter
1/4 cup cocoa
6 tablespoons milk
1 lb xxx sugar
1 cup walnuts (pecan)

Cake Instructions

  1. Preheat oven to 400◦
  2. In a mixing bowl, combine sugar, salt and flour. Mix well. Set aside.
  3. In a saucepan, add butter, water, and cocoa. Bring to a boil.
  4. Add the cocoa mixture to the flour/sugar mixture. Stir well.
  5. Stir in the buttermilk, vanilla and baking soda. Beat until smooth.
  6. Pour into a greased jelly roll pan. (or a 11 x 14 inch pan)
  7. Bake for 30 minutes.
  8. Pour the frosting over the cake, while still hot and fresh out of the oven.

Frosting  Instructions

  • 5 minutes prior to the cake coming out of the oven start the frosting.
  • In a saucepan, bring to a boil the butter, cocoa, and milk. Remove from heat.
  • Stir in xxx sugar and nuts.
  • Pour over cake

***Pecans can be substituted for walnuts. Nuts can also be sprinkled on top of the frosting rather than added to it.
