Rum Balls



1 box of vanilla wafers.
2 cup xxx sugar
1-1/2 cup pecans, chopped
2 tablespoons cocoa
2 tablespoons light corn syrup
1/4 cup rum
1/2 cup sugar
2 pkts of hot cocoa mix (dry)

  1. Crush some vanilla wafers in a zip-lock baggie (or between wax paper) with a rolling pin. Crush until you have 1 cup of crumbs.
  2. Combine the one cup of vanilla wafer crumbs, XXX sugar, 2 tablespoons cocoa, and 1 cup of the  pecans. Stir.
  3. Add the corn syrup & rum. Mix well.
  4. Shape into 1" balls
  5. Divide the dough in thirds. 
  6. Roll 1/3 in granulated sugar, 1/3 cocoa, 1/3 chopped pecans, and the remainder in the hot cocoa mix.
