Pumpkin-Apple Strudel Muffins


Muffins

2-1/2 cups flour
2 cups brown sugar
2 teaspoons cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
dash of mace
1/2 teaspoon salt
1 teaspoon baking soda
2 eggs
1 cup of canned pumpkin
1/2 cup vegetable oil
2 cups peeled, finely chopped apple

 Streusel Topping

1/4 cup granulated sugar
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/4 cup cold butter
1/3 cup flour

  • Combine, using a pastry blender.

  1. Preheat oven to 350◦
  2. Combine flour, sugar, salt and spices, mix well and set aside.
  3. In a mixing bowl combine the pumpkin, vegetable oil and pumpkin. Mix well.
  4. Slowly  stir in flour mixture.
  5. Fold in apples.
  6. Spoon in paper-lined muffin tins.
  7. Top with streusel topping.
  8. Bake for 20-25 minutes.
