Peanut Butter Squares


Bottom Layer
3/4 cup cold butter
2 squares (1 oz each) semi-sweet chocolate
1-1/2 cup gramcracker crumbs
1 cup flaked cocolnut
1/2 cup chopped salted peanuts
1/4 cup toasted wheat germ

Filling
two 8oz pkg cream cheese
3/4 cup sugar
2/3 cup chunky peanut butter
1 teaspoon vanilla

Topping
4 squares (1 oz each) semi-sweet chocolate
1/4 cup butter


  1. For the bottom layer......In a microwavable bowl, heat the butter and 2 squares of chocolate for 1 minute; stir. continue to microwave and stir in 30 second intervals until melted and smooth.
  2. Stir in cracker crumbs, coconut, peanuts and wheat germ.
  3. Press this into a greased 9 13 pan. cover and refrigerate for at least 30 minutes.
  4. For the filling.....In a mixing bowl, combine all of the filling ingredients and beat until smooth and creamy.
  5. Spread this over the bottom layer. Return to refrigerator for another 30 minutes.
  6. For the topping.....In a microwavable bowl, heat the butter and 4 squares of chocolate for 1 minute; stir. continue to microwave and stir in 30 second intervals until melted and smooth.
  7. Pour over filling and refrigerate until set.
  8. Cut into squares.
