Mississippi Mud Cookies


 
You'll love these chocolate cookies topped with marshmallow. Pair these up with a tall glass of milk!
Ingredients
  • 1 cup semi-sweet chocolate chips
  • ½ cup milk-chocolate chips
  • 1 cup plus 2 tablespoons miniature marshmallows
  • 1 cup sugar
  • ½ cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla
  • 1-1/2 cup flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup pecans, chopped
Instructions
  1. Preheat oven to 350
  2. In a small microwavable bowl, melt the semi-sweet chocolate chips in 30 second increments. Stir until smooth.
  3. In a mixing bowl, beat the butter and sugar until creamy.
  4. Add eggs, one at a time.
  5. Stir in vanilla and melted chocolate.
  6. In a separate bowl, combine the flour, baking powder and salt. Add to chocolate batter.
  7. Fold in the pecans and milk-chocolate chips.
  8. Drop dough by heaping tablespoons on baking sheet.
  9. Press 3 marshmallows into each cookie.
  10. Bake for 10-12 minutes.
