1 cup lemon yogurt
2 tsp grated lemon zest
1 tablespoon poppy seed
1-3/4 cup flour
1-1/4 teaspoon baking poder
1/2 teaspoon salt
2 large eggs
3/4 cup sugar
1/2 cup canola oil
1 teaspoon vanilla
Glaze
3/4 cup xxx sugar
2 tablespoons fresh lemon juice
- Preheat oven to 350 ◦
- Grease and flour a loaf pan.
- In a bowl, combine the flour, baking powder and salt. Mix and set aside.
- In a mixing bowl whisk together the eggs, yogurt, sugar, oil, lemon zest, poppy seeds and vanilla.
- Gradually add the flour mixture to the egg mixture. Stir until throughly mixed.
- Pour the batter into the gread loaf pan and bake for 55-60 minutes or until a toothpick inserted comes out clean.
- While the bread is baking, prepare the glaze.....In a small bowl combine the xxx sugar and lemon juice. Stir until well mixed.
- While the bread is still warm and cooking on a wire rack spoon the glaze evenly over the bread.
