Caramel Cracker and Chocolate Bars



3/4 cup n cold butter, cut into cubes
45 Club Crackers (I like Keebler)
14 oz can of sweetened condensed mild
1/2 cup brown sugar
3 tablespoons light corn syrup
6 oz pkg of semi-sweet chocolate chips

  • Line a 8 or 9 inch square glass baking pan with foil, that drapes over the edge.
  • Grease the foil with butter.
  • Arrange a single layer of crackers in the pan. Set aside.
  • In a saucepan, combine the milk, corn syrup, butter and brown sugar. Bring to a boil, while stirring constantly.
  • Reduce the heat to a low boil, and continue to stir for an additional 7 minutes.
  • Remove from heat. 
  • Spread one third of this over the crackers.
  • Repeat the cracker and caramel mixture twice.
  • While still hot, sprinkle the chocolate chips over the caramel.
  • Allow to sit for 4-5 minutes and spread evenly over caramel.
  • Cover and refrigerate for at least 2 hours.
  • Lift out of pan and cut into pieces.
