Butter Mint Candy


2-1/2 cup xxx sugar
3 tablespoons butter
2 tablespoons cream
1/2 teaspoon peppermint extract. (can also use spearmint or wintergreen)
  1. Combine above ingredients.
  2. Divide in several small portions and add food coloring 
  3. Roll each section into a 1/2" rope.
  4. Refrigerate until firm.
  5. Cut into slices or press into a candy mold.
  6. Allow to stand on wax paper overnight.
