Blueberry Puff Pancakes



3 eggs
1/2 cup milk
1/4 cup flour
1/4 cup sugar
1/2 teaspoon vanilla
1/2 teaspoon orange extract
1 tablespoon butter
1/4 teaspoon nutmeg
1 cup fresh blueberries + a few more to serve on top when serving for presentation
1 cup fresh strawberries, cut into quarters
Powdered sugar or syrup
  • Preheat oven to 425°
  • In a medium bowl, beat the eggs, milk, flour, 1 tablespoon sugar, vanilla and orange extract.
  • In a skillet (The handle must be oven proof or wrapped with alum. foil) melt the butter. 
  • Stir in remaining sugar and nutmeg.
  • Arrange blueberries over sugar mixture.
  • Cook until berries are slightly soft.
  • Carefully pour batter over berry mixture.
  • Bake for 10-15 minutes.
  • Sprinkle with a bit of powdered sugar (or drizzed with syrup)
  • Top with fresh strawberries, blueberries and bananas. (Great for a special breakfast on the 4th of July!)
