Bisocotti-like bread (AKA mandel bread)





1-1/4 cup sugar
3 eggs
1 cup canola oil
1 teaspoon vanilla
3-1/4 cup flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
1-1/2 teaspoons ground cinnamon
1 cup chocolate chips, semi-sweet
1 cup roughly chopped walnuts.


  1. Preheat oven to 375 ◦ 
  2. Line a cookie sheet with parchment paper.
  3. Whisk together the flour, salt, 1/2 teaspoon cinnamon and baking powder. Set aside.
  4. In a separte small bowl combine 1/2 cup sugar and 1 teaspoon cinnamon. Mix and set aside.
  5. In a mixing bowl, beat the eggs. Add oil, 3/4 cup sugar, and vaniila. 
  6. Gradually add the flour mixture, stir until fully mixed.
  7. Fold in the walnut and chocolate chips.
  8. dived the doough into 6 equal portions and shape each piece into a 2" wide loaf.
  9. Roll in the cinnamon-sugar mixture. (See step 4) Place on cookie sheet
  10. Bake until a light golden-brown. about 15-20 minutes.
  11. Slice the bread on a diagonal, about  3/4-inch wide. Place the cut-side up.
  12. Bake for another 12-15 minutes.
