ZUCCHINI JELLY

6 cups grated zucchini
6 cups sugar
1/2 cup lemon juice
1 cup crushed pineapple with juice
6 oz package of orange Jello-O
1 package of Sure-Jell
  • In a saucepan add zucchini & lemon juice. Allow to boil until clear, about 6 minutes.
  • Add pineapple. Stir well.
  • Add sugar and boil for an additional 6 minutes or until sugar is dissolved.
  • Add Sure-jell. Boil for an additional minute.
  • Remove from heat.
  • Add Orange Jell-O. Stir until dissolved.
  • Ladle into hot sterilized canning pint size jars, wipe the rims, apply lids and rings.
  • Hot water bath for 5 minutes.
* This may take up to 2 weeks to set
