Zucchini Casserole


1 box stuffing mix (homemade would be best), prepared according to package instructions.
3 cups of peeled and diced zucchini
1 medium onion, finely diced
1 can of cream of chicken soup
8 oz sour cream
1/2 cup (1 stick) butter, melted
  • Preheat oven to 350°
  • Cook the zucchini & onion in a little water until tender. Drain
  • Pour 1/4 cup of the melted butter in the bottom of your casserole dish.
  • Top with zucchini & onions.
  • Place prepared stuffing on top of Zucchini & onions.
  • Combine soup, sour cream and butter. Pour over stuffing
  • Bake for 35 minutes.
