Vegan Zucchini Bread



1/4 cup raisins
1/4 cup chopped walnuts
1-1/4 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 cup of shredded zucchini
1/2 cup unsweetened applesauce
1/3 cup brown sugar or honey or maple syrup
1 tablespoon flax seed, ground
2 teaspoon vanilla
3/4 cup of almond milk
1 tablespoon lemon juice
  • Combine all the above ingredients.
  • Bake at 350° for 60-70 minutes.
