- Preheat oven to 350°
1-1/4 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon ground cinnamon
3/4 cup sugar
2 large eggs, beaten
1/2 cup vegetable oil
teaspoon vanilla
1/2 teaspoon salt
2 cups grated zucchini, squeezed of excess moisture
1-1/2 cups ground pecans or walnuts
one 8 oz can of crushed pineapple, drained
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon ground cinnamon

one 8 oz can of crushed pineapple, drained
- Whisk together the flour, baking soda, baking powder, and cinnamon. Set aside.
- Combine: Sugar, eggs, vegetable oil, vanilla & salt.
- Slowly stir in dry ingredients.
- Add zucchini, nuts and pineapple.
- Put into a greased loaf pan.
- Bake for about 45 minutes or until inserted fork comes out clean.
- Let sit at least 10 minutes before removing from pan.
